You can only use this effect of "Vampire Grace" once per turn. Once per turn: You can declare 1 card type (Monster, Spell, or Trap); your opponent sends 1 card of that type from their Deck to the GY.
The monster effect "If this card is in your Graveyard, and a Level 5 or higher Zombie-Type monster is Special Summoned to your side of the field by the effect of a Zombie-Type monster: You can pay 2000 LP; Special Summon this card from your Graveyard" is a Trigger Effect that activates in the Graveyard. (This effect does not target.)
The monster effect "Special Summon this card from your Graveyard" is an optional effect that can be activated when a Level 5 or higher Zombie-Type monster is successfully Special Summoned to your Monster Zone by the effect of a Zombie-Type monster. (It cannot be activated during the Damage Step.)
